Barrels were chosen that held a balance of hop bitterness and acidity

before fermenting in an ancient oak puncheon that previously held both West Country cider and Caribbean rum

amplified by complex honey notes from the Norwegian wildflower honey

Orchard blend from Lower Porthamel farm, just 20 steps from our production site. This is an acid driven cider made with a combination of different Welsh Heritage eating and cooking apples. Aged in it's own lees for an extra 3 months. Our approach to northern Spanish ciders! Wild fermented, no added sulphites. All our ciders are made with 100% apple juice.
